Michael and I are still plugging away at weight loss. I know it doesn’t look like it… especially since my blog brings a bit of transparency to our food habits. EEP! Ok you’ve got me. We did have a few sweets. It was Emma’s birthday and we celebrated. It has become a three-post-celebration! Each of the recipes that went into her Epic-Diabetes-Inducing-Birthday-Cake are all fantastic recipes that really needed their own post.
Dessert is amazing! Avoiding dessert when you’re on a diet is absolutely torturous! Have you ever heard a cake, cookie or pastry with a butter frosting sing “Come and Get Your Love” to lure you in? I have.
When you are a food junkie like Michael and I… it’s pretty much impossible to have any form of self-control. That’s why (with the exception of the recent birthday) we are keeping sweets and their delicious butter frosting out of the house! It’s sad… I know… it breaks my heart to think about it, but it needs to be done. Someone has to pull the plug on these two fatties!
So, I leave you with this amazing butter frosting recipe. As I’m concluding this letter to you, I am pondering all the delicious plans you have for it and my heart breaks, knowing it will never touch my lips. Sigh!
Decorating Gadgets:
- 1/3 cup butter, softened
- 4 cups powdered sugar
- 3 tablespoons milk
- 1 teaspoon vanilla
- In a large bowl, beat butter with an electric mixer (or your stand-mixer) on medium speed until smooth.
- Gradually add 1 cup of powdered sugar beating well between each addition. Add the milk and vanilla, beat well. Gradually, beat in remaining sugar. If frosting is too thick, add additional milk to reach spreading consistency.
