Apple Cider Vinegar is used in many recipes; salad dressings, marinades, vinaigrettes, food preservatives, and cocktails! Vinegar can also be used as a household cleaning product. It can be store bought, but you are likely to spend about $5 if you want it to be organic and raw (this provides the most health benefits). Making apple cider vinegar yourself is easy and practically free; the only real expense is the time it takes for the apples to ferment!
Making Apple Cider Vinegar
Ingredients:
organic apple scraps (cores and peels)
2 tablespoons sugar
water
Directions:
Place apple scraps (about 1 cup) in a clean/sterilized quart size canning jar; cover with water and stir in sugar. Your apple scraps can be added all at once or you can add them over the course of a few days. Cover the canning jar with cheesecloth held in place with the metal ring to keep out flies and dust. Store the jar in a dark place at room temperature to allow for fermentation.
Every few days stir the mixture and spoon off any mold that forms. When you are making apple cider vinegar there will be a grayish film on top, the mixture will bubble, and the contents of the jar will thicken, this is all normal.
After about 4 weeks “taste test” your apple cider vinegar, if it is strong enough strain and pour into your desired *storage container or bottle (ferment additional 2 weeks if you prefer stronger vinegar). Your vinegar will be cloudy due to the sediment from the apples; this is called “the mother” it is completely harmless and believed to have healing properties, however if you don’t like the look of it you can filter it through a coffee filter if necessary.

*It is best to use glass, plastic, wood, enamel, or stainless steel containers when making and storing vinegar. Do not use a metal container when making or storing vinegar; acid in the mixture will corrode metal or aluminum objects.
