Apple Pie Patty Shells

I am at home enjoying these freshly made delicious apple pie patty shells… ah… I can’t do it. I’m not at home. The last few posts I’ve told you about the Iowa Hutchinson’s and how they are visiting these last two-weeks. We have had such a blast with all kinds of fun things. I don’t realize how cool of an area I live in until I get to show it off to people who don’t live here. The Northwest is awesome!!


So no… I’m not at home making apple pie patty shells. I made them awhile ago because I knew I needed to prepare for this week. And I can honestly say… they were really good! Remember when I was making The Captain’s Lady Lemon Pie? Well… I had to find a really amazing puff paste recipe that would do The Captain’s Lady proud. I felt a lot of pressure for that recipe because her story of immense love and longing during her husband’s time at sea was so sweet I felt I needed to really get it right. Well, I did. It rocked. With the help of one of my 1950’s cookbooks. I made a separate post for this ultimate puff paste recipe because it is amazing.

In that same cookbook it showed me how to make these really amazing cups from the puff paste. By simply cutting out a circle and a doughnut shape and stacking them you have a fill-able pastry cup. I filled mine with apple pie filling topped with whipped cream. As you can see the possibilities are endless with this one. I know that I will be making a variety of treats with berries, pears, peaches, oh the list goes on and on. I bet apple pie patty shells would  be even more amazing with a scoop of ice-cream on top. Where have the delicious flaky cups been all my life?

Ingredients
  1. 1 ultimate puff paste recipe
  2. 6 cups thinly sliced, peeled cooking apples
  3. 3/4 cup sugar
  4. 2 tablespoons all-purpose flour
  5. 1/2 teaspoon ground cinnamon
  6. 1/8 teaspoon ground nutmeg
Instructions
  1. Roll puff paste 1/4 inch thick, cut into 3-inch rounds with floured cutter. Cut out centers from half of rounds with a small cutter; moisten underside of each ring with cold water and place one on each remaining plain round, pressing down lightly. Bake at 450 degrees for 10 minutes. Reduce temperature to 400 degrees and bake for 5 minutes. Then reduce temperature to 350 degrees and bake 15 minutes longer.
  2. In a large sauce pan stir together sugar, flour, cinnamon, and nutmeg. Add apple slices. Gently toss until coated. Cook uncovered over medium heat until apples are soft.
  3. Fill patty shells with apple pie filling. If desired top with whipped cream or ice-cream.
