These look delicious don’t they? This last weekend Michael’s son came over and we fired up the grill. Michael’s son is grown and out of the house, so when he is able to come over to visit we jump on the opportunity. Michael went to the grocery store and purchased half of a fresh wild caught salmon. Many people swear by slathering their salmon with mayonnaise but I’ve never tried it. Since we had a fresh batch of homemade mayonnaise I figured we should give it a try. We topped it off with some fresh parsley that we have growing in a large planter outside. The result was amazing! I couldn’t believe how moist and delicious it was. We were all picking at the left over bits stuck to the aluminum foil after we had stuffed our bellies because we just couldn’t get enough. There was no shame. I’m actually craving it now as I type… sigh…
The shining star of dinner was the salmon obviously and I hadn’t really planned a side dish. We had some carrots in the fridge so I biased cut them, added some rosemary from my plant outside and minced up garlic. I neatly wrapped it up in aluminum foil after drizzling with olive oil and tossed it on the grill.
“I just really don’t like the flavor of garlic” – said no one ever
The carrots were amazing. I have to say this barbecue dinner was my second favorite meal ever. It comes in a very short second next to barbecue ribs. mmmm… so … I now have to fire up the grill because I made myself hungry. Good job.
- 4 medium carrots, peeled & bias cut
- 1 small onion, sliced thin
- 1-2 sprigs of fresh rosemary*
- 3 cloves garlic, minced
- olive oil
- Place carrots and onion sliced on bottom of a roasting pan
- Top with fresh rosemary leaves and minced garlic
- Drizzle the top with olive oil
- Cook in 400 degree oven for 20 minutes or until carrots are soft
- * a sprig of rosemary is about 6 inches
- If you are barbecuing the carrots, place ingredients on a large piece of aluminum foil and fold up sides to contain the carrots. Place another piece of foil on top. Barbecue on top rack until carrots are soft.
