Heaven help me, it’s the Red Robin BLTA! Yes the BLT has finally graduated from the little baby sandwich it was into a big grown up sandwich. What do you do? Enjoy… with all your might! I announced last week that I despise mushrooms… yes it’s true. It may offend some of you more than it should and while you stew in your anger, the rest of us mushroom haterz will move on with our lives. Now that you know one of my most hated foods, it’s only fair that I let you in on a little known secret. Laurel loves avocados! I eat them in my salad, eggs, omelets, sandwiches, on chips, oh hell… cut that puppy in half and give me a spoon! That being said, look at this gorgeous Red Robin BLTA!

Here’s a little background about how I stumbled and fell… in love with the Red Robin BLTA. My mom is amazing. Every year my mom does a head count of all her grand kids, which is a lot, and buys them school clothes. My mom is probably the most dedicated mother and grandmother I have ever met and I appreciate it will all of my being. This year when mom called me to plan for school shopping I jumped on the offer like any sane mother would do.

This is the first year that both the kids have graduated from the kids section to the Junior’s and adult sections of the clothing department. They have also begun to identify their own sense of style this year. This has made me truly realize the consequences of having children. Thank God for mom! Honestly I think every mother out there should have an even more amazing mother to be there for her!

While doing our annual school clothes shopping spree this year, we took a much-needed break (mostly because Winnie demanded it) and headed to Red Robin. This was my first time there so the menu was new to me. It didn’t take me long before my eye was drawn toward the word “Avocado”. Yes! Score!

Red Robin BLTA

Let me just tell you that it was perfect. I told Michael all about it and decided it was going up here on Bread & With It. It isn’t a vintage recipe nor has it been passed down through generations like most of the Bread & With It recipes. What it has though is avocado and that is what matters.

Ingredients
  1. 2 croissants, sliced
  2. 2 slices cooked bacon
  3. 1/2 avocado, sliced
  4. 2 large lettuce leaves
  5. 1 juicy tomato, on the vine
  6. mayonnaise
Instructions
  1. Spread croissant slices with mayonnaise. Layer bacon, avocado slices, lettuce, and tomato in the center of croissant slices.
  2. Enjoy!

  1. I love avocados too. My husband and I frequently add them to our BLT (on Orowheat Oatnut bread). I also like them mashed and spread on toast (Oatnut again, although it was Roman Meal growing up when my sister-in-law would make these for her daughter and I for breakfast).

      I think it would be a sad world without Avocados 😀 I have never just mashed them and spread on toast yet. I’m going to start doing that! Thanks Jeanne!
