Did you know that most cans of cranberry sauce from the grocery store are made from high fructose corn syrup? I don’t understand the need to put these chemicals in our bodies. I’ve seen the effects of it in my life, and it gets even more upsetting when I think about the majority of American people. Cancer, diabetes, chronic headaches are just a few things (it seems) everyone has! Oh… I’ll tone down my crazy health rant. I have a tendency to get overly excited about this topic.
So… as you know, Michael and I are pretty picky about what we eat. We are picky in the sense that we avoid unnecessary chemicals and GMO crops (primarily BT & HT strands). When the budget allows, we buy organics too. We are careful with what quality of food we eat, but we also have a issues with eating lots of sweets and carbohydrates. Specifically homemade sweets and carbohydrates. I know I’ve mentioned this before… I’m sorry if you’re like “Geez! Laurel, get to the point.” The point is; I have worked up the motivation to start round two of “Slim Laurel Down!”.
After Winnie made her entrance into the world in October 2013, I starting working to cut the baby fat. I lost about 30 pounds, and now I’m at pre-Winnie weight. This doesn’t mean I’m healthy… I’m still very much overweight. After finding out about my little friend named “skin cancer”, I decided it was time to activate round 2 of “Slim Laurel Down!”.
I’m two days in, and regretting all this weight gain. My muscles are sore from basic exercise that really shouldn’t make my muscles sore. Uggg… I’m thoroughly disappointed in myself, but ready for the change. I’m not quite sure why this motivation snagged me right before the holidays, but I’m hoping to stay strong!
- 1 cup water
- 1 cup sugar
- 2 cups cranberries (8 ounces)
- Combine sugar and water in a medium sauce pan. Bring to a boil on high heat for 5 minutes to dissolve sugar. Add cranberries. Return to a boil and reduce heat to medium-high for 10-15 minutes. The sauce is done when a drop gels on a chilled plate. Pour sauce into desired container and chill until firm.
