My cranberry and walnut salad recipe doesn’t have historical significance but with all these dessert recipes I’ve whipped up here at Bread & With It I’ve started craving a salad to counter act all the sugar. The old recipes I work with have a tendency to be very vague. This means that sometimes I have to remake the recipe several times just to get it right. When working on the 1800’s Lemon Pie recipe there was several batches of lemon pie that we were all eating for breakfast and dessert before we finally just started throwing it away because it was just too much. I think I’m going to have to start sending all this food to Michael’s work so they can all enjoy it and I don’t have to gain 50 pounds!
Michael works down the street from our house, so every day for his lunch hour I am lucky enough to spend an hour with him before he needs to zip back to work. It never seems like enough time! I am not one of those people who are only married and tolerate their spouse because they promised to do so. I really love my husband. As in… he’s my best friend and I don’t know what I would do without him love. So when the weekdays are here and he’s at work and I’m manning the home front… I miss him. Terribly.
This is why I’m so grateful for “lunch break”. It’s that time mid-day that we get to stop everything and just enjoy each other’s company, talk, reconnect or vent about our days over lunch. For lunch I try to switch things around so we don’t just eat sandwiches every day. Cranberry and walnut salad is one of my favorite lunches, it is really good and only takes moments to slap together!
- 1 cup romaine lettuce
- 1/4 cup dried cranberries
- 1 oz. mozzarella cheese
- 1/4 cup walnuts
- salad dressing
- Toss ingredient and top with desired dressing (I thought it was delicious with blue cheese dressing)
i’m always on the lookout for new salad recipes to make during the week.. definitely trialing this cranberry and walnut salad in my kitchen. looks delicious!
