Hey guys! It’s Monday evening here. The baby just went to bed for the night and I gave the older kids permission to stay up a little while to play Minecraft. I’m parked on the couch with my laptop, feeling pretty good after a healthy dinner. I whipped up a tasty coconut rice stir fry with the left over steak from our beach trip.
After four days at the beach with 30 other Hutchinsons, we had a decent amount of left-overs. I was the lucky one with an empty cooler so I got to bring home all the steak, crab, fish and other food deliciousness. I’m hoping to find the time to make a bunch of great meals with it all. The kitchen at the beach house was amazing. I miss those beautiful granite counter-tops and sexy gas stove. What can I say… I’m a sucker for a beautiful kitchen!

When put to the test in coconut rice stir fry it passed with flying colors. Using coconut water instead of water when cooking up the rice made it absolutely divine. There is a natural sweetness to coconut water that subtly made this dish. I will be making variations of this dish in the future because it’s really that good! I’m looking forward to using the rest of my coconut water to make some blended drinks too!

- 2 cups basmati rice
- 4 cups coconut water
- 1 tablespoon oil
- 2 medium beef steaks, sliced
- 1 large yellow zucchini, sliced
- 1 small onion, sliced
- 1 head broccoli
- 2 cloves garlic, minced
- 1 tablespoon oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon graded ginger
- 1 teaspoon ground cumin
- shredded coconut (optional)
- In a large sauce pan combine rice, coconut water and oil. Bring to a boil. Continue to boil until water line is just below rice. Cover and cook over medium low heat for 20 minutes.
- Meanwhile, in a large pan fry sliced beef in oil until cooked through. Add remaining ingredients and cook until vegetables are tender. Serve on rice, if desired sprinkle with shredded coconut.
loving the look of this stir fry.. definitely looks delicious. awesome idea to use coconut water to make the rice, i usually use coconut milk or cream and i find the rice sometimes turns out gluggy. definitely will be trying your version!
